Ingredients
Serves 2
- A dozen fresh oysters
- 1 tablespoon of Mirin (Japanese rice wine)
- 1 teaspoon of soy sauce
- 1 teaspoon of sesame oil
- 1 small chilli, seeds removed, finely diced
- Pinch of sea salt and pinch of black pepper
- 1 spring onion, finely sliced on a diagonal
- A few coriander leaves, picked, chopped

Method
Place the Mirin, soy, sesame oil, chilli, coriander, salt and pepper in a small bowl and stir to combine.
Place your oysters on a serving platter then coat each oyster with a little of the sauce and garnish with a few slices of the spring onion.
